Simply proper coffee...
at the push of a button, from the bean-to-cup machine! At least that's how most owners imagine it: press the button, great coffee comes out. Sadly it's not always quite that simple. And indeed: in specialty coffee circles these machines are frowned upon, and usually nothing good comes out of them.
But: with a few tricks, tweaks and the right beans (ours, naturally) you too can conjure up a great coffee at the push of a button.
First things first: the beans
For bean-to-cup machines we like to recommend our darker roasts. The reason: the darker coffee is roasted, the less acidity remains in the bean. So it won't knock you over even if your machine isn't set up perfectly.
Lighter roasts usually carry more acidity. That may not sound great at first - but without any, coffee simply tastes empty and lifeless. And "acidity" doesn't mean "sour". A fully ripe strawberry has plenty of acidity too. You just don't notice, because it's so sweet. But back to coffee: to start with, we recommend one of the varieties listed here.
If you want to play it safe: with gscheid.schwoarz you get virtually zero acidity and full-on chocolate - no rocket science degree required.
What should I look out for?
A modern bean-to-cup machine has plenty of settings. Fresh from the factory, mostly brown water comes out. Every machine is different and not all offer every setting. But try the following:
- soft to medium-hard water
- water temperature as hot as possible, up to 95°C
- the grind is usually set far too coarse at the factory - best set it to "very fine"
- the dose is usually far too low. We've had good results with 12g for a 200ml cup.
- for espresso, too, a higher dose than in a portafilter is advisable: try 10g for 30-40ml of coffee
- milk foam: to taste and cup size - don't set it too hot.
More tips
Still not tasting the way you want? Then check the following:
- The coffee should flow evenly and densely from the spout and not run through too quickly.
- The crema should not be "taxi beige" but hazelnut brown.
- Beige crema? Grind finer or dose higher.
- Very important: clean the machine regularly, including brew group and grinder.
- Coffee too bitter? Then try one of our lighter roasts on the right.
